Healthy Homemade Pumpkin Bread Recipe

Today, I am going to share my healthy homemade pumpkin bread recipe with you. Do you like pumpkin bread? Me? I do. I do love me some pumpkin bread. I loved the one that I had at Starbucks and at a little coffee shop in front of my dorm (Vida Coffee Co.) in the States while ago. It's soft and has moisture in it. I love my pumpkin bread to be exactly like the ones that I had there, yet I wanted to make a healthier one. If I have options, I always choose to eat healthy, even if it's a little difference from regular flour to whole wheat flour. It's a big difference to our body and it's important to choose the better for our body and for our health, and still enjoy the food we love.
So in this recipe, instead of using white flour, white sugar, and butter, I choose to use healthier alternatives. If you are a huge pumpkin bread lover, or if you are curious to try it, please keep reading :)
Also, this recipe is so so easy. If you aren't good at baking, don't worry, if I can do it, you can. (Seriously!) So let's begin.

Here are all the ingredients.
- 1 1/2 cups of whole wheat flour
- 1 1/2 cups of beet sugar or brown sugar
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 1/2 tablespoon of pumpkin pie spice *I did a blog post of how to make original pumpkin pie spice so please check it out! (How To Make Pumpkin Pie Spice)
- 1/2 cup of extra virgin olive oil
- 2 eggs
- 1/2 cup of pumpkin puree
- 1 teaspoon of vanilla extract
---Before we forget, preheat the oven to 180 degrees!---
Once you have the ingredients ready, separate them to dry ingredients (left) and to wet ingredients (right) and whisk them like so in the pictures below.
For dry ingredients, wheat flour, pumpkin pie spice, baking soda, and baking powder.
For wet ingredients, beet sugar/brown sugar, eggs, pumpkin puree, olive oil, and vanilla extract.
Once you whisk each of the ingredients, put dry and wet ingredients together and mix them until they are mixed evenly. But do not over mix them.
Then prepare the loaf pan by putting some butter or non-stick cooking spray inside to avoid the batter sticking to the loaf pan.
Once it's ready, put the batter into the loaf pan.
Put it into the oven for about 55 minutes. I usually do 55 minutes and check if it's done by sticking a stick. If the batter comes out with the stick, it's not done yet, so put it in for about 5 more minutes or so. *It really depends on what kind of oven you're using so I cannot guarantee the exact baking time!
Just let it cool for a little bit before removing from the pan. And voila!
Yummy and healthy pumpkin bread is ready! It's perfect for breakfast, as a little snack, or as a little something to have with your tea/coffee!
I love this pumpkin bread recipe because it's very easy, super yummy and healthy, thus it's heavy enough to comfort my belly.
